Killer Kale Salad |

Ingredients -

  • For the dressing
  • Garlic – 1 clove, finely chopped
  • Red chilli – 1 small, finely chopped
  • Honey – 1tsp
  • Light soy – 2tsp
  • Peanut butter – 1 heaped tbsp
  • Coriander – handful
  • Lime juice – 1tsp
  • virgin olive oil – 2tbsp
  • salt and pepper, to taste
  • For the salad
  • bunch kale, tough stems removed and leaves chopped or torn (about 8 cups) Trio peppers
  • 1cup cubed Red radish – thinly sliced 1 pc Red apple
  • 1 pc thinly sliced Walnuts
  • 5 gms feta cheese
  • To crumble dried cranberries
  • ⅓ cup Cherry tomato
  • A Few Barley – 50gms (Cooked in Stock) Palate Culinary Academy

Procedure -

  • Prepare the dressing
  • Place the honey, light soy, red chilli, peanut butter, garlic and coriander in a bowl. Whisk in the extra virgin olive oil, and salt and pepper, to taste.
  • Assemble the salad
  • Place all ingredients in a large bowl. Add the desired amount of dressing and toss to coat. Serve and enjoy!
